Chicken Ciabatta Bread with Rainbow Salad

Light, Fresh, Delicious Rainbow Salad

 Ingredients

  • 6 Pieces Ciabatta/ White/ Brown Bread
  • 300 Grams Grilled Chicken Breast – cut thin and round slice
  • 200 Grams Wild Herb Quark/ Yoghurt
  • 1 Medium  Cucumber – cut in fine round shape
  • 1 Small Radish – cut in fine round shape
  • 1 Red Onion – cut in fine round shape
  • 1 Teaspoon Salt
  • A Pinch of Pepper
  • 3 Oranges
  • 4 Tablespoon Olive oil
  • 1/2 Vinegar
  • Parsley – chopped

Preparation

  • First peel the oranges, remove the seeds and slice it into thin round shape
  • Spread the Wild herb Quark/ Yoghurt on the Ciabatta/ Bread
  • Next, place the sliced Chicken breast on the Ciabatta, place the Orange on top and then sprinkle with salt and pepper
  • For the Rainbow Salad mix the Cucumber, Radish, Red onion, Parsley, Olive oil, Vinegar, Salt, Pepper – mix it gently
  • At the end,  sprinkle fine chopped parsley on top

Preparation Time:

Once the Rainbow Salad is ready, you can serve with Ciabatta/ Bread and ice cool white wine.   Enjoy this Light, Fresh , Delicious  Salad and Bread!
